Sausage Bread Stuffing

INGREDIENTS
  1. 2 loaves bread
  2. 2 16 oz packages of pork sausage
  3. 4 eggs (slightly beaten)
  4. 1 large onion (chopped)
  5. 2 cups celery (diced)
  6. 1/2 cup of milk
  7. 1/3 cup of parsley
  8. 1 1/2 tsp thyme
  9. 1/2 tsp of salt
  10. 1/2 tsp of seasoned pepper
  11. 1/2 tsp of sage
DIRECTIONS
  1. Using 8 quart pan, cook the sausage over medium heat until browned.
  2. Using a slotted spoon remove sausage.
  3. Pour all but 1/4 cup of drippings from pan.
  4. In drippings, add onion and celery. Stir occasionally. Cook until tender, ~10 minutes.
  5. Remove pan from heat.
  6. Stir in cooked sausage, bread crumbs, eggs, milk, parsley, thyme, salt, pepper and sage.
  7. Toss gently to mix.
